Citrus Cupcakes

Ingredients


100g Self Raising Flour
½ tsp Baking Powder
100g Margarine
100g Caster Sugar
2 Eggs
Grated rind of 1 lime
1 teaspoon of Lemon Essence/flavouring
Lime or Lemon Curd

Decorations


Butter Cream for frosting
Edible Glitter
Sprinkles or Lemon/Orange Jelly Slice

Method


Pre heat oven to 170 fan assisted, 190 or Gas mark 5.

Put all the ingredients excluding the lime zest and curd into a food processor and blend for 2 mins. If you don’t have a food blender then cream the marg and sugar together, beat in the eggs (adding a teaspoon of the flour stop curdling) and mix in the rest of the dry ingredients, lime zest and flavouring.

Put a tablespoon of mixture into the cup case and then add a heaped teaspoon of lemon/lime curd and then add another tablespoon on the top.

Cook for 12 – 15 mins or until golden brown.

Leave to cool on a wire tray.

Decorate the top with piped frosting, sprinkle with edible glitter and add your decorations.
