Ingredients
75g Self Raising Flour
25g Cocoa Powder
1 tsp Baking Powder
100g Margarine
100g Caster Sugar
2 Eggs
1 tablespoon of Sunflower Oil
Fudge pieces
White Chocolate broken into small pieces approx. 25g
Decorations
Frosting either Vanilla Butter Cream or Chocolate
Edible Glitter (optional)
Grated Chocolate or Chocolate decoration of your choice and/or Fudge pieces
Method
Pre heat oven to gas mark 170 fan assisted, 190 or Gas mark 5.
Sieve the flour, baking powder and cocoa powder together.
Put all the ingredients apart from the fudge pieces and white chocolate into a food blender and blend for 2 mins. If you don’t have a blender then cream the marg and sugar together, beat in the eggs (adding a teaspoon of the flour and cocoa mixture to stop curdling) and mix in the rest of the dry ingredients, oil and fudge pieces and white chocolate.
Spoon into cup cake cases and bake for 12 – 15 mins or until cooked through.
Leave to cool on a wire tray.
Pipe on the buttercream and sprinkle with glitter. Decorate using your chosen chocolate decorations or fudge pieces.
